Fenugreek rice pilaf (Methi Chawal)
Fenugreek Rice Pilaf is made with fresh fenugreek leaves, ginger, garlic, tomatoes, and turmeric. A delicious vegeterian and vegan rice pilaf that can be enjoyed with lentils or plain yogurt.

  1. In a medium sauce pan add the vegetable oil and heat it on medium heat. Add chopped green chili, ginger, and garlic to the pan. Sauté for a minute. Add the chopped tomato and sauté for 2-3 minute till the tomato begins to soften. Add the fenugreek leaves and turmeric powder to the pan and mix well with tomatoes. Let it cook for 4-5 minutes on medium to low heat.
  2. Drain the rice and add it to the pan. Stir and sauté for a minute. Add 2 cups of water and season with salt. Give everything a good mix.
  3. Let the mixture come to a boil and then lower the heat. Cover the rice with a lid and let it simmer till the rice is cooked.
  4. Serve with yogurt and enjoy.
Recipe Notes

Fenugreek leaves can either be bought fresh or frozen at the Indian market. I think for this recipe frozen Fenugreek leaves work best, as fresh fenugreek leaves take a lot of time to clean.
