Tandoori Chicken Tikka
Tandoori Chicken Tikka is a popular North Indian dish consisting of succulent pieces of marinated chicken thighs that are skewered and then cooked in a tandoor. Chicken tikka is very easy to cook, it is healthy and makes for a perfect summer meal.

  1. In a mixing bowl combine the yogurt, garlic, ginger,chili powder, garam masala, lemon juice, and salt to taste. Add the chicken thighs to the bowl and coat the chicken well with the marinade.
  2. Cover the chicken, place it in the fridge, and let it marinate for at least 2 hrs, but 24 hrs would be ideal
  3. Soak skewers in water for 30 minutes. In the meantime Pre-heat the oven to 400 degrees. Remove the chicken from the fridge and let it come to room temperature.
  4. Divide the chicken among skewers, leave about 1/8 inch space between pieces. Place the skewers across a foiled lined sheet pan. Put the chicken tikkas in the oven and let it cook for 20 minutes.
  5. Turn the skewers every 5 minutes or so and brush with melted butter. Chicken is done once the juices run clear and slightly charred around the edges.
  6. Sprinkle with lemon and serve along with mint chutney.
